Fancy Breakfast Cupcakes

I've made these like a trillion times, and they always come out nice and tasty. One of my best friends and her hubby came to visit me in Zambia in May, and they were really excited about these. They are perfect for breakfast and lunch, but can also be served as a side dish for dinner. The good thing is that adults love them just as much as kids, and they taste just as good the day after being made. You can fill them with just about anything, and it's a great way to get rid of left overs. Eg.chopped hot dogs, ham, mincemeat, bacon, feta cheese, parmesan, cheddar cheese (sprinkle it on top or pour it in the mix), broccooli, mushrooms etc. If you vary the spices (and herbs) too you will give the taste buds a whole different experience every single time.

* Just a bit less than one egg per cupcake.
Other than that I just added what ever I could find in the fridge and cabinet:
* Onions
* Garlic
* Paprika in different colours
* Carrots
* One chili
* A pinch of salt (you can easily skip this if using herbs instead)
* A bit of pepper

The eggs will make them rise themselves, nice and fluffy. Therefore add only about 3/4 of the mix to every mould.

1. Preheat the oven to 200 degrees.
2. Simply chop the ingredients and add them to the whisked eggs.
3. Put them in the oven and bake them for about ten minutes or till they are golden brown.
